How can one deal with stress that is caused by people that they have to interact with on a daily basis? For example, being a sales clerk and the customer is being extremely stressful?

Stress causes when you want things to happen your way when they are not. You have to realize the universal truth that whatever is destined to happen, will happen. No matter how hard you try to prevent it. So what is the best option? Either end up releasing excess adrenaline or be a witness to the inevitable? When you start practicing the latter option, things no longer become stressful.
You can also look at your situation as a great opportunity to immune yourself from so called stressful situations. Each episode can be used as a meter to gauge your progress.

I think, once you get habituated with the "stressful client", the situation would improve.
Why don't you take it as a challenge, that you need to win?
Someone posed you the challenge, "I bet on it, that you would get stressed". And you said, "No".
So, go ahead, and prove it, that you won't get stressed with this guy!
